Baking (Soda) Up Some Environmentally Sound Winemaking

Chateau Smith Haut Lafitte, a cru classé producer in St-Emilion is choosing to stand out by experimenting and adopting a variety of winemaking practices that benefit the land and the environment. If you buy premium wine from them you are helping reduce the release of damaging CO2 into the atmosphere. CO2 production is a side-product of fermentation, and Smith Haut Lafitte recycles theirs, turning it into baking soda, the powdery white substance that gives lift to baked goods.
