Gravity is the ethos behind much of what happens in the Cos d’Estournel cellar. It governs the motion in the winery, from how their cone-shaped tanks gently extract tannin from the grapes to how the wine gets how it gets to the bottling floor. Pauillac may have a reputation for wines with less elegance but Cos’ d’Estournel’s process, along with the range of microclimates and soils in their vineyards are the reason it is a “super second” growth. If you want to purchase premium wine, Cos d’Estournel is every bit as good as a first growth.
