Cornas Evolves
Cornas has been both revered and regarded with caution in the past. However, thanks to the next generation of winemakers and a warming climate it may be reaching a more approachable style. Winemakers say it is now easier to avoid overly green tannins while retaining high acid levels—the key if you want to buy fine wine that ages with grace. The alcohol levels of Cornas are elevated now, and the grapes picked earlier in the harvest. But harvesting at the right time, as the legendary Auguste Clape’s son Pierre-Marie does, results the perfect balance. Cornas’ time may have come to shine.
