Dom Pérignon has been making Champagne since the 17th century, and for the past 28 years has been the product of Richard Geoffrey's genius. In a momentous decision, Geoffrey will be passing the keys to castle to a new chef-de-cave, his assistant Vincent Chaperon. In an interview with with Wine-Spectator, Chaperon spoke to what makes Dom Pérignon special. One key to this fine wine is a combination of six elements: harmony, precision, intensity, the tactile, the mineralogy and the complexity. Read on for his thoughts on what is ahead for Dom Pérignon!
